Strawberry Salsa over Salmon

Servings: 4 | Prep: 10 min | Cook Time: 15 min

INGREDIENTS

  • 4 4 oz. salmon fillets

  • 1 cup strawberries, diced

  • 1 cup cucumbers, diced

  • 1 jalapeño, minced

  • 1/4 cup fresh basil, chopped

  • 1/4 cup feta cheese, crumbled

  • 1 tbsp. Olive oil

  • Salt

  • Pepper

  • 2 tbsp. ALDI USA strawberry balsamic glaze and more to drizzle over top

 

This Strawberry Salsa over Salmon is so good! It’s perfect over salmon or really any fish and would also be great over chicken!

 

DIRECTIONS

  1. Preheat oven to 425 degrees.

  2. Prepare a baking sheet. Add salmon fillets to baking sheet and top with salt and pepper. Bake for 12-15 minutes.

  3. While the salmon is cooking prepare the salsa. In a large bowl combine the strawberries, cucumbers, jalapenos, basil, feta, olive oil, balsamic glaze, salt and pepper. Stir until well combined.

  4. Serve over cooked salmon. Feel free to serve with a carb like rice, farro or quinoa.
