Hi there, I’m Rachel
Rachel Simon MS, RD, CDN
I’m originally from Buffalo, NY and graduated from D’Youville College with a Bachelor of Science and Master of Science in Dietetics in 2011.
Along with being a full-time Registered Dietitian and Certified Dietitian Nutritionist in the State of New York, I hold a Certificate of Training in Adult Weight Management with the commission on Dietetic Registration.
B.S. & M.S. in Dietetics – D’Youville University
Registered Dietitian (RD)
Certified Dietitian Nutritionist (CDN)
Education & Credentials
I had the opportunity to gain valuable clinical experience in an acute care setting while living in Florida, working at the Heart of Florida Regional Medical Center in Davenport.
From 2012 to 2024, I served as an oncology dietitian at Roswell Park Comprehensive Cancer Center, where I specialized in Leukemia, Transplant and Cellular Therapy, and Pediatrics.
In 2024, I transitioned to a new role with the Office for People with Developmental Disabilities (OPWDD), continuing my commitment to providing compassionate, evidence-based nutrition care.
From working in both clinical and outpatient settings, and what I kept hearing from patients was, “I just need someone to help me figure out how to make this work for my life.”
That’s when Buffalo Dietitian was born!
The Start of Buffalo Dietitian
Buffalo Dietitian isn’t just a space for sharing recipes and nutrition tips. It’s the heart of my passion for helping others live healthier lives.
What began in 2015 as a creative outlet to post healthy recipes, favorite products, fitness updates, and wellness tips has since grown into something much more.
In 2017, I decided to officially launch, Buffalo Dietitian as both a blog and a private practice, allowing me to work 1:1 with clients while continuing my full-time career.
Through this platform, i’ve been able to help hundreds of women & individuals build a healthier relationship with food, simplify meal planning, and feel more confident in their nutrition choices.
A Deeper Look Into My Life
I’ve been married to my best friend Dan (AKA Babe) since August 2019. Fun facts about our relationship; we met on an online dating site, Bumble. We built our dream house together in 2018. We both love fitness! Especially triathlons. Lake placid is our favorite place to travel to. We have two Rhodesian Ridgebacks named Daisy and Kona.
Some fun facts about me; I enjoy, red wine, coffee, peanut butter, traveling, murder mysteries, grocery shopping especially at Aldi and cooking!
My husband and I have two living children, Theodore and Gabriel.
My husband and I are not strangers to pregnancy loss. Our second son Lincoln died just a few days shy of 20 weeks when I went into preterm labor, followed by three additional pregnancy losses.
I share our experience with pregnancy loss quite often on my social media platforms to bring awareness and comfort to others who have had similar experiences.
Since I can remember fitness has been a part of my life! My interest in sports nutrition is the reason I’m a Registered Dietitian today.
During my high school years, I participated in Swimming and track and field. After graduation I went on to row at the University at Buffalo my freshman year (by far the hardest and most demanding sport I have ever done).
In 2009, I completed my first full marathon (26.2-mile run). Since then, I’ve completed a total of four full marathons, twenty-six half marathons (13.1-mile run), three Olympic triathlons (0.93-mile swim, 24.8-mile bike, 6.2-mile run), two half Ironmans (1.2-mile swim, 56-mile bike, 13.1-mile run) and one full Ironman (2.4-mile swim, 112-mile bike, 26.2-mile run).
Plus, endless amounts of running events. In addition to endurance events, I enjoy weightlifting and yoga. As a runner and triathlete, I recognize the importance and the link between a healthy diet and an active lifestyle.
