Broccoli & Cheddar Tots

Servings: 30 tots | Prep: 15 min | Cook Time: 20 min

INGREDIENTS

  • 1, 10-oz. bag frozen broccoli

  • 2 large eggs, beaten

  • 1 1/2 cup cheddar cheese, shredded

  • 1 cup panko breadcrumbs

  • 1 tbsp ranch seasoning, dry

  • Salt

  • Pepper

 

These Broccoli & Cheddar Tots are perfect for BLW, toddlers and adults who dislike veggies.

 

DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. Cook the broccoli. Pat dry with paper towels. Transfer to a food processor and pulse until very finely chopped. Scrape broccoli into a medium bowl and stir in eggs, cheddar cheese, panko, ranch seasoning, salt and pepper.

  3. Using a tablespoon measuring spoon and lightly dampened hands, scoop out level tablespoonfuls of broccoli mixture and press into a tater tot shape. Transfer to a plate. About 30 tots.

  4. Lightly coat a baking sheet with cooking spray or just use a baking mat. Working in batches, arrange tots in a single layer leaving space between them.

  5. Bake for 20 minutes. Serve with your choice of sauce (ketchup, ranch, blue cheese) or eat as is!
