Shrimp Tostadas
Makes: 12 tacos | Prep: 30 minutes | Cook Time: 10 minutes
INGREDIENTS
1.5 lbs. shrimp, tails removed
1 tsp. garlic powder
1 tsp. paprika
1 tsp. chili powder
1 tbsp. olive oil
12 small corn tortillas
1 14.5 oz. can refried beans, fat free
1 cup guacamole
1 cup cheddar cheese, shredded
¾ cup cilantro avocado yogurt dressing
Optional
Pickled onions
Jalapeños, sliced
Cilantro, chopped
Avocado, diced
Lime wedges
These Shrimp Tostadas are the perfect weeknight meal. Crunchy corn tortillas topped refried beans, creamy guacamole, shrimp, shredded cheese and a creamy cilantro lime dressing.
DIRECTIONS
Preheat oven to 400 ℉. Spray both sides of the corn tortillas with cooking spray. Bake for 4-5 minutes.

Make sure the shrimp is dry. Season with garlic powder, paprika, and chili powder. Heat a pan with 1 tbsp. Olive oil. Add the shrimp and sauté for 1-2 minutes on each side.
Heat refried beans and start to assemble your tostadas.
Layer beans, guacamole, shrimp, cheese, then top with pickled red onions, jalapeños, cilantro, avocado, lime wedges and drizzle with cilantro avocado dressing. Enjoy!
