Salmon with Pesto Pasta and Roasted Broccoli

Servings: 4 | Prep: 5 min | Cook Time: 15 min

INGREDIENTS

  • 1 lb. Salmon

  • 8 oz. dry Barilla protein plus pasta

  • 2 Broccoli crowns, cut into bit size pieces

  • 1/4 cup Pesto

  • 1/4 cup, grated Parmesan cheese

    • Other

      • 1 tbsp. Olive oil

      • Pepper

 

This Salmon Pesto Pasta with Roasted Broccoli is perfect for that weeknight dinner idea when you are limited on time. Not only is it delicious it’s extremely versatile.

 
  • Don’t like salmon? Swap for chicken, chicken sausage, shrimp etc.

    Don't like broccoli? Swap for asparagus, cauliflower, zucchini etc.

DIRECTIONS

  1. Preheat oven to 425 degrees. Prepare a baking sheet.

  2. Add salmon to prepared baking sheet and top with pepper. Toss broccoli with olive oil and pepper. Add to the broccoli to same pan with salmon.

  3. Bake for 12-15 minutes.

  4. Cook pasta according to directions. Drain and toss with pesto.

  5. Divide pasta, cooked salmon and roasted broccoli into four equal portions. Top with parmesan cheese.
