Salmon with Honey Cilantro Lime Drizzle

INGREDIENTS
2 6 oz. Salmon fillets
2 small Broccoli crowns, cut into bite size pieces
1 tbsp. Olive oil
Salt and pepper
Drizzle
1/4 cup Soy sauce
3 tbsp. Honey
2 tbsp. Cilantro, chopped
2 tsp. Olive oil
1 tsp. Cornstarch
2-3 Garlic cloves, minced
Juice of 1 lime
Pepper
Optional (Cooked rice, quinoa, farro)
This Salmon with Honey Cilantro Lime Drizzle is mouthwatering and is really perfect for meal prep. Keep the salmon or swap out the protein.
DIRECTIONS
Preheat oven to 425 degrees.
Prepare a baking sheet with a silicone baking mat. In a small bowl mix broccoli with olive oil, salt and pepper. Add the broccoli to the pan. Add the salmon to the same pan and sprinkle with salt and pepper. Bake for 13-15 minutes.
While that’s baking heat a small saucepan over low-med heat. Add soy sauce, honey, olive oil, cornstarch, garlic, lime juice and pepper. Heat for a few minutes or until it starts to thicken slightly. Turn heat off and add cilantro.
Remove salmon and broccoli from over. Place with rice (optional) and drizzle with sauce. Enjoy! This sauce is also delicious over Turkey meatballs with broccoli and for meal prep!
