Air Fryer Chicken Milanese

Servings: 2 | Prep: 10 min | Cook Time: 15 min

INGREDIENTS

  • 2 large boneless, skinless chicken breasts (cut into 4 cutlets)

  • 3/4 cup seasoned breadcrumbs

  • 2 eggs

  • Parmesan cheese, shaved

  • Lemons, cut into wedges

  • Arugula, spinach, and or lettuce mixture

 

This Air Fryer Chicken Milanese is a delicious easy meal that looks like it took you hours to cook.

 

DIRECTIONS

  1. Place the chicken cutlets between 2 sheets of parchment paper or plastic wrap and pound out to 1/4-inch thick.

  2. Whisk the eggs in a bowl. In another bowl add the breadcrumbs. Dip the chicken into the eggs, then the breadcrumbs. Spray each side of the chicken breast with cooking spray.

  3. Add the chicken to an air fryer heated to 400F. Heat for 5-7 minutes. Flip the chicken and then cook for an additional 5-7 minutes.

  4. Serve over a bed of arugula spinach mixture (or green of choice) top with freshly shaved Parmesan cheese and freshly squeezed lemon.
