Chicken Sausage, Butternut Squash & Gnocchi Sheet Pan Meal

Servings: 4 | Prep: 10 min | Cook Time: 25 min

INGREDIENTS

  • 4 chicken sausage links (sweet apple flavor works best), cut into 1/4-inch rounds

  • 16 oz. package of potato gnocchi

  • 3 cups butternut squash, peeled and diced into 1/2-inch cubes

  • 2 cups kale, chopped

  • 2 tbsp. olive oil

  • 1 tsp. garlic powder

  • 1/2 tsp. thyme

  • 1/2 tsp. pepper

  • 1/2 tsp. paprika

  • 1/4 tsp. salt

  • 2 oz. goat cheese, crumbled

 

This Chicken Sausage, Butternut Squash & Gnocchi Sheet Pan Meal is the perfect fall recipe.

 

DIRECTIONS

  1. Preheat oven to 400 degrees.

  2. Prepare a baking sheet with a silicone baking mat. In a large bowl combine the sliced chicken sausage, gnocchi butternut squash, kale, olive oil, garlic powder, thyme, pepper, paprika and salt. Toss until everything is well coated.

  3. Place the mixture on the prepared sheet pan and bake for 24-26 minutes. Flipping halfway through.

  4. Remove from the oven and top with crumbled goat cheese. Enjoy!
