Mediterranean Cod Bowl

Servings: 4 | Prep: 10 min | Cook Time: 30 min

INGREDIENTS

  • 4 Morey’s brand butter & herb wild cod fillets

  • 2 cups couscous, cooked

  • 2 bell peppers, sliced into strips

  • 1 tbsp. olive oil

  • Salt & Pepper

  • 2 baby cucumbers, sliced

  • 1 cup quartered artichokes

  • 1 cup grape tomatoes, halved or quartered

  • 1/2 red onion, sliced

  • 20 kalamata olives, pitted

  • 2 oz. feta cheese, crumbled

  • 1 cup plain non-fat Greek yogurt

  • 1 tbsp. Tzatziki blend, Greek Goddess

 

This Mediterranean Cod Bowl is easy and delicious. Makes for the perfect weeknight dinner idea.

 

DIRECTIONS

  1. Cook cod according to directions. While cod is cooking assemble the bowl.

  2. Heat the olive oil in a small sauté pan. Add the peppers and seasoning with salt and pepper. Sauté to desired liking.

  3. Mix the Greek yogurt with tzatziki blend until well combined.

  4. Assemble the bowl. Couscous, cod and all the toppings.
