Chocolate Peanut Butter Protein Muffins

INGREDIENTS

  • 1.5 cup oat flour (pulse oats in a blender)

  • 2 scoops Clean Simple Eats chocolate peanut butter protein powder

  • 1/4 cup unsweetened cocoa powder

  • 2 tsp. baking powder

  • 1 tsp. baking soda

  • 1/4 tsp. Salt

  • 2 ripe bananas, mashed

  • 3/4 cup plain nonfat Greek yogurt

  • 1/4 cup peanut butter, smooth

  • 2 tbsp. Honey

  • 2 eggs

  • 1 tsp. Vanilla extract

  • 1/4 cup Reese's peanut butter chips (optional)

 

These Chocolate Peanut Butter Protein Muffins are perfect for satisfying that after dinner sweet tooth.

 

DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. In one bowl mix the oat flour, protein powder, unsweetened cocoa powder, baking powder, baking soda and salt together.

  3. In a different bowl mix the mashed banana, Greek yogurt, peanut butter, honey, eggs and vanilla together.

  4. Add the dry ingredients to the wet ingredients. Stir until well combined. Fold in 2 tbsp. Of the Reese’s chips if using.

  5. Prepare a cupcake tin. Spoon the batter evenly into the cupcake liners (12 muffins). Top with remaining Reese’s chips.

  6. Bake for 18-20 minutes. Enjoy!
