Pumpkin Oatmeal Bake
Makes: 10 squares | Prep: 10 min | Cook Time: 35 minutes
INGREDIENTS
2 cups quick oats
2 tsp. pumpkin pie spice
1 tsp. baking powder
¼ tsp. salt
1 cup pumpkin puree
1 ¼ cup milk, or milk alternative
⅓ cup honey, or maple syrup
2 eggs, large
2 tsp. vanilla extract
Optional
½ cup pecans or walnuts, chopped
¼ cup chocolate chips
This Pumpkin Oatmeal Bake is the best cozy fall breakfast. Made with oats, pumpkin, honey, pumpkin pie spice and chopped nuts. The entire family will love it!
DIRECTIONS
Preheat the oven to 375℉. Prepare an 8×8 baking dish with cooking spray.
In a medium bowl, combine oats, pumpkin pie spice, baking powder, and salt. Stir to combine.
In a different separate bowl combine pumpkin puree, milk, eggs, vanilla, and honey. Stir to combine. Add the dry ingredients to the wet ingredients and stir until everything is well combined.
Fold in nuts. Top with chocolate chips. Add the mix to the prepared baking dish. Bake for 30-35 minutes.
Let cool for 5 minutes before slicing. Top with Greek yogurt or nut butter (optional). Enjoy!
