Protein Buckeyes
Makes: 15 | Prep: 15 min | Freeze Time: 2 hours 20 minutes
INGREDIENTS
1 ¼ cup oat flour, pulsed oats to a very fine texture
¼ cup protein powder, unflavored or vanilla
¼ tsp. salt
½ cup natural peanut butter, creamy
⅓ cup honey
1 tsp. vanilla extract
1 tbsp. coconut oil (divided 2 tsp, 1 tsp)
½ cup chocolate
Coarse salt
These Protein Buckeyes are literally the best! Chocolate and peanut butter are a classic combination and one of my favorites! Why not turn put a healthier twist on the popular buckeye recipe!
DIRECTIONS
In a large bowl combine, oat flour, protein powder, and salt.
In a separate bowl combine, peanut butter, honey, vanilla extract, and 2 tsp coconut oil.
Mix. It will be very thick; I suggest using your hands to really mix well. It should eventually come together like play dough.
Roll into 15 equal size balls (heaping tbsp size). Place the balls on a silicone mat or parchment paper.
Freeze for 20 minutes.
Remove the balls from the freezer and dip half of each ball into the chocolate.
Place back in the prepared baking sheet. Sprinkle with salt.
Freeze for 2 hours and enjoy!
