My Favorite Balanced Meal

Servings: 4 | Prep: 10 min | Cook Time: 20 min

INGREDIENTS

  • 1 lb. ground turkey

  • 1 packet of taco seasoning

  • 3-4 medium-large sweet potatoes, diced

  • 1 bag of baby bell peppers, sliced

  • 2 tbsp. olive oil

  • Pepper

  • Garlic powder

  • 2 mini avocados

 

This is My Favorite Balanced Meal. It has all the components, protein, carbs, fats and color.

 

DIRECTIONS

  1. Heat ground turkey in a pan until brown and cooked through, 5-7 minutes. Add taco seasoning packet and 1/2-3/4 cup water to cooked ground turkey. Continue to heat on low-medium until liquid is absorbed.

  2. Toss sweet potatoes with a 1 tbsp. olive oil, pepper and garlic powder. Air fry at 375 degrees for 15-20 minutes or until fork tender.

  3. Toss baby bell peppers with 1 tbsp. olive oil, pepper and garlic powder. Air fry at 400 degrees for 15-18 minutes.

  4. If you do not have a dual basket air fryer you can sauté the bell peppers stovetop or cook the sweet potatoes in the oven at 400 degrees until fork tender.

  5. Arrange bowl, taco meat, sweet potatoes, bell peppers and 1/2 mini avocado. Great meal prep idea!
