Mini Banana Chocolate Chip Muffins

INGREDIENTS

  • 2 very ripe medium bananas, mashed

  • 2 tbsp. Butter, melted

  • 2 tbsp. Unsweetened applesauce

  • 2 eggs

  • 2 tsp. vanilla extract

  • 1/4 tsp. salt

  • 1 tsp. baking soda

  • 1/3 cup honey

  • 1 1/2 cups oat flour

  • 1/4 cup mini chocolate chips

 

These Mini Banana Chocolate Chip Muffins can be part of a healthy breakfast or snack and are kid friendly.

 

DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. In a bowl, whisk together the salt, flour, and baking soda.

  3. In a separate bowl, whisk together the mashed banana, melted butter, unsweetened applesauce, eggs, vanilla extract, and honey.

  4. Add the dry ingredients to the wet and whisk until just combined. Fold in the chocolate chips.

  5. Grease a mini muffin tin and fill 3/4 of each tin with batter, yields 32 mini muffins. Bake for 11 – 14 minutes, until a toothpick inserted comes out clean. Cool for 2-3 minutes in the muffin tin, then use a knife along the edges to remove the muffins and place on a wire cooling rack.

  6. Store leftover muffins in an airtight container in the fridge for 3-4 day.
