Mediterranean Meatloaf

Makes: 4 | Prep: 10 min | Cook Time: 45 minutes

INGREDIENTS

  • 1 pound ground turkey, 93/7

  • 1 egg, large

  • ½ cup breadcrumbs, plain

  • ½ cup feta cheese, crumbled

  • 1 ½ cup spinach, chopped

  • ¼ cup sun dried tomatoes in oil, chopped

  • 1 tbsp. sun dried tomato oil

  • 1 tsp. garlic powder

  • ½ tsp. pepper

  • ¼ tsp. salt

  • Tzatziki, optional

 

This Mediterranean Meatloaf bursting with flavor. It’s low carb and lightened up using ground turkey. Make it ahead for an easy healthy dinner during the week or freeze.

 

DIRECTIONS

  1. Preheat oven to 350℉. Prepare a loaf pan by spraying it with cooking spray. Set aside.

  2. In a large bowl combine, ground turkey, egg, breadcrumbs, feta cheese, chopped spinach, chopped sun dried tomatoes, sun dried tomato oil, salt, pepper, and garlic powder.

  3. Mix until well combined either with a spoon or clean hands.

  4. Dump the ground turkey mixture into the prepared pan. Evenly distribute the mixture into the pan.

  5. Bake for 40-45 minutes. Let sit for 5-10 minutes before slicing.

  6. Serve with tzatziki and choice of veggies (side salad or roasted veggies would be my choice).
