Breakfast Tacos

Makes: 4 | Prep: 10 min | Cook Time: 10 minutes

INGREDIENTS

  • 8 eggs, large

  • 4 oz. cheddar cheese, or cheese of choice

  • 8 small flour tortilla shells

  • 2 Roma tomatoes, diced (or any other preferred vegetable)

  • 4 slices bacon, cooked and chopped

  • 1 avocado, sliced

  • Salt, to taste

  • Pepper, to taste

    Optional

    • Jalapeños, sliced

    • Cilantro, chopped

    • Salsa

    • Hot sauce

 

These Breakfast Tacos make the perfect breakfast. Packed with fluffy cheesy eggs, tomatoes, bacon and topped with avocado, cilantro and hot sauce.

 

DIRECTIONS

  1. Heat a pan over medium heat. Spray with cooking spray. Add diced tomatoes to the pan and cook for 1-2 minutes.

  2. In a large bowl whisk together the eggs, salt and pepper.

  3. Add the eggs to the heated pan with tomatoes and scramble. Towards the end of cooking add in the cheese. Continue to cook until cheese is melted.

  4. Heat a flat pan and spray it with cooking spray. Heat tortilla shells on both sides until slightly crisp.

  5. Assemble the tortilla shells (2 tacos per serving), shell, eggs, bacon, and any desired toppings!

  6. Enjoy!
