Hot Honey Chicken Sheet Pan Meal

INGREDIENTS

  • 1 lb. Boneless skinless chicken breast, cut into bit size pieces

  • 3 medium-large sweet potato, cut into bite size cubes

  • 1 lb. Brussels sprouts, halved

  • 1/2-1 red onion, cut into bite size pieces

  • 2 tbsp. olive oil

  • 1 tbsp. paprika

  • 1 tbsp. garlic powder

  • 1 tbsp. onion powder

  • 1/4 tsp. cayenne pepper

  • 1/2 tsp. salt

  • 1/2 tsp. Pepper

  • 2 tbsp. Hot honey

  • Optional ingredients:

    • Sliced jalapeños

    • Feta cheese, crumbled

    • Sliced avocado

 

This Hot Honey Chicken Sheet Pan Meal is the perfect weeknight meal. I mean who doesn’t lover a good sheet pan meal?

 

DIRECTIONS

  1. Preheat oven to 425 degrees.

  2. Par cook the chopped sweet potatoes in the microwave for 5-7 minutes. They always take longer to cook.

  3. Add the par cooked sweet potatoes, Brussels sprouts, onions and chicken to a sheet pan. Toss with 2 tbsp. Olive oil and all the spices.

  4. Bake for 25 minutes, tossing halfway through. Remove from oven and top with hot honey and any other desired ingredients.

  5. Great for meal prep or dinner and leftover for lunch the next day!
