Honey Roasted Carrots

Servings: 6 | Prep: 5 min | Cook Time: 30 min

INGREDIENTS

  • 1.5 lbs. carrots (peeled and similar size)

  • 2 tbsp. honey + more for drizzling (I used hot honey)

  • 2 tbsp. olive oil

  • Salt & Pepper

  • 1/3 cup feta cheese, crumbled

  • Optional, fresh dill or I think even pistachios would be delicious

 

This Honey Roasted Carrots are the perfect side dish for a casual or fancy dinner meal.

 

DIRECTIONS

  1. Preheat oven to 450 degrees.

  2. Pat carrots dry. On a prepared baking sheet, toss the cleaned carrots with the honey, olive oil, salt & fresh black pepper. 


  3. Roast carrots for 25-30 minutes until carrots are lightly charred & roasted.

  4. Remove from oven and top with crumbled feta, additional honey if desired. Optional dill & pistachios.
