Butternut Squash Fall Skillet

Servings: 4 | Prep: 10 min | Cook Time: 40 min

INGREDIENTS

  • 1 cup quinoa, uncooked

  • 2 cups butternut squash peeled and diced into bite-sized pieces

  • 2 tbsp. olive oil

  • Salt & pepper

  • 1/2 yellow onion, diced

  • 4 chicken sausage links, sliced

  • 4 cups Kale, chopped

  • 2 cloves of garlic, minced

  • 1 tsp. Thyme

  • 1 tbsp. olive oil

  • 1 tbsp. maple syrup

  • 1 tsp. apple cider vinegar

  • 1/4 cup dried cherries

  • 2 ounces goat cheese, crumbled

 

This Butternut Squash Fall Skillet is perfect for fall and is absolutely delicious.

 

DIRECTIONS

  1. Preheat oven to 425 degrees. Toss butternut squash with 1 tablespoon of olive oil, salt and pepper. Mix to combine. Add to baking sheet and bake for about 25 minutes, until squash is soft.

  2. Meanwhile, cook quinoa according to directions and set aside.

  3. Add remaining 1 tablespoon of olive oil to a skillet over medium heat.

  4. Add onion and chicken sausage and cook until onion begins to soften, about 5-7 minutes.

  5. Add the kale, garlic and thyme. Cook until kale is wilted, about 4-5 minutes. Mix in squash and quinoa.

  6. In a small bowl mix together olive oil, maple syrup, and apple cider vinegar and drizzle over the mixture. Top with cherries and goat cheese. Enjoy!
