Chicken Parmesan Nuggets

Servings: 20 nuggets | Prep: 15 min | Cook Time: 20 min

INGREDIENTS

  • 1 lb. ground chicken

  • 1 egg

  • ½ cup breadcrumbs divided into 2, ¼ portions

  • ¼ cup part skim mozzarella cheese shredded

  • 1 tsp. garlic powder

  • 1 tsp. salt

  • ¼ tsp. pepper

  • 2 tbsp. parmesan cheese

  • 1 1/4 cup marinara sauce

  • 1 1/4 cup of part skim mozzarella cheese, shredded

 

This Chicken Parmesan Nuggets are kid and adult friendly and are easy and delicious.

 

DIRECTIONS

  1. Preheat oven to 400 degrees. In a large bowl combine the ground chicken, egg, ¼ cup breadcrumbs, ¼ cup mozzarella cheese, garlic powder, salt and pepper together.

  2. Form into 20 equal size oval shaped nuggets. In a small bowl add ¼ cup breadcrumbs and Parmesan cheese.

  3. Coat each nugget with the breadcrumb and Parmesan cheese mixture. Add them to a prepared baking sheet and spray them lightly with cooking spray.

  4. Cook for 8-10 minutes. Flip, lightly spray again with cooking spray and cook for an additional 4-5 minutes.

  5. Remove from oven and add 1 tbsp of marinara sauce and 1 tbsp of mozzarella cheese to each nugget. Place back in oven and cook for an additional 4-5 minutes. Serve with a side salad. Enjoy!
