Healthier Hamburger Helper

Servings: 6 | Prep: 5 min | Cook Time: 30 min

INGREDIENTS

  • 1 lb. ground turkey (or ground beef)

  • 1 tbsp. olive oil

  • 1 white onion, diced

  • 2 green bell peppers, diced

  • 1 box of Barilla protein plus pasta

  • 4 cups beef bone broth

  • 8 oz. can tomato sauce

  • 2-3 garlic cloves, minced

  • 1 tsp. salt

  • ½ tsp. pepper

  • 1 tsp. paprika

  • 1 tsp. chili powder

  • 5.3 oz. container plain Greek yogurt

  • 1 cup cheddar cheese, shredded

  • 2-3 cups spinach, chopped

This Healthier Hamburger Helper tastes just like the one your mom used to make for you when you were a kid but with more protein and fiber. I’d call that a win!

DIRECTIONS

  1. Heat the olive oil in a large pan over medium heat. Add in the onion, peppers and garlic. Sauté for about 3 minutes.

  2. Add in ground turkey. Break apart and cook until browned and cooked through. Pour in dry pasta, beef broth, tomato sauce, and all the spices.

  3. Cover and let cook for 10-15 minutes or until almost all the liquid is absorbed. Stirring every few minutes.

  4. Once the liquid is absorbed, stir in the Greek yogurt and cheddar cheese.

  5. Then add in the spinach. Stir and continue to heat until the spinach is wilted. Enjoy!
