Grilled Shrimp, Corn, Feta, Orzo Salad

INGREDIENTS
1.5 lbs. shrimp with tails
2 tbsp. olive oil
1 tsp. Paprika
1/2 tsp. garlic powder
Salt & pepper
12 oz. orzo, dry
1 1/2 cups corn
1/4 cup feta, crumbled
1/4 cup cilantro, chopped
Dressing
1 tbsp. red wine vinegar
1 lime, juice of
1 1/2 tbsp honey
1/2 tsp. Chili powder
1/4 tsp red pepper flakes
1/3 cup olive oil
This Grilled Shrimp Corn, Feta, Orzo Salad makes for the perfect summer meal. Leave the shrimp out for the perfect side dish!
DIRECTIONS
Whisk together the vinegar, lime juice, honey, chili powder, red pepper flakes and olive oil together. Cover and place in fridge.
Cook orzo according to directions. Set aside. Spray a small fry pan with some cooking spray and add corn kernels. Cook, stirring occasionally until golden brown 7-9 minutes.
Place shrimp in a large bowl. Drizzle with the olive oil and toss. Sprinkle all over with the paprika, garlic powder, salt and pepper. Toss well until combined. Spread the shrimp in a grill pan or on a skewer. Grill shrimp for 1-2 minutes flip and cook for an additional 1-2 minutes.
In a large bowl toss orzo, corn, feta, cilantro, some of the dressing and the shrimp together. Add more dressing as desired.
