Greek Turkey Meatball Bowl

INGREDIENTS
1 pound ground turkey 93/7
⅓ cup feta cheese
½ cup spinach fresh, chopped
¼ cup bread crumbs plain
1 large egg
2 tbsp. sundried tomatoes chopped
1 tbsp. nonfat Greek yogurt plain
1 tsp. oregano
1 tsp. garlic powder
Salt to taste
Pepper to taste
Toppings
½ cup Feta cheese
1 English cucumber diced
1 cup grape tomatoes halved or quartered
1 bell pepper diced
½ red onion sliced
½ cup kalamata olives
½ cup tzatziki
Optional
rice, couscous or farro
This Spinach Macaroni & Cheese is so cheesy and delicious you'll never want to make boxed macaroni & cheese again. The entire family will love it!
DIRECTIONS
Preheat oven to 400℉. Line a baking sheet with a silicone mat or with parchment paper.
In a large bowl, combine the ground turkey, feta cheese, spinach, breadcrumbs, egg, Greek yogurt, sun-dried tomatoes, and spices.
Use hands to combine all the ingredients. Form into 12 equal size balls. Place the meatballs evenly spaced on the prepared baking sheet.
Bake for 18-20 minutes.
Remove from oven and arrange bowl. Rice, meatballs, feta cheese, cucumber, tomatoes, bell peppers, onions, olives, and tzatziki.
