Greek Turkey Meatball Bowl

INGREDIENTS

  • 1 pound ground turkey 93/7

  • ⅓ cup feta cheese

  • ½ cup spinach fresh, chopped

  • ¼ cup bread crumbs plain

  • 1 large egg

  • 2 tbsp. sundried tomatoes chopped

  • 1 tbsp. nonfat Greek yogurt plain

  • 1 tsp. oregano

  • 1 tsp. garlic powder

  • Salt to taste

  • Pepper to taste

    Toppings

    • ½ cup Feta cheese

    • 1 English cucumber diced

    • 1 cup grape tomatoes halved or quartered

    • 1 bell pepper diced

    • ½ red onion sliced

    • ½ cup kalamata olives

    • ½ cup tzatziki

    Optional

    • rice, couscous or farro

 

These Feta & Spinach Turkey Meatballs are juicy, flavorful and great for meal prep or a quick weeknight dinner! My favorite Tzatziki is the spinach parm from Aldi and it’s made with greek yogurt.

 

DIRECTIONS

  1. Preheat oven to 400℉. Line a baking sheet with a silicone mat or with parchment paper.

  2. In a large bowl, combine the ground turkey, feta cheese, spinach, breadcrumbs, egg, Greek yogurt, sun-dried tomatoes, and spices.

  3. Use hands to combine all the ingredients. Form into 12 equal size balls. Place the meatballs evenly spaced on the prepared baking sheet.

  4. Bake for 18-20 minutes.

  5. Remove from oven and arrange bowl. Rice, meatballs, feta cheese, cucumber, tomatoes, bell peppers, onions, olives, and tzatziki.

  6. Enjoy!
