Spinach Macaroni & Cheese

Servings: 6 | Prep: 30 min | Cook Time: 20 min

INGREDIENTS

  • 12 oz elbow macaroni dry

  • 2 tbsp. butter

  • 3 tbsp. flour

  • 2 cups milk

  • 1 cup chicken broth low sodium

  • ½ cup part skim mozzarella cheese shredded

  • ½ cup cheddar cheese shredded

  • 10 oz frozen spinach thawed & water squeezed out

  • ½ cup seasoned bread crumbs

  • Pepper to taste

  • Salt to taste

 

This Spinach Macaroni & Cheese is so cheesy and delicious you'll never want to make boxed macaroni & cheese again. The entire family will love it!

 

DIRECTIONS

  1. Preheat oven to 375℉.

  2. Cook pasta according to directions. Set aside.

  3. In a large pan melt butter. Add flour and cook over low heat stirring with a whisk. Add milk and chicken broth and continue whisking, until it comes to a boil and becomes smooth and thick.

  4. Season with salt and pepper. Once it becomes thick, remove from heat, add 3/4 cup of shredded cheese (1/4 cup at a time) and mix well until cheese is melted. Adjust salt and pepper to taste.

  5. Add cooked macaroni and spinach. Pour into baking dish.

  6. Top with 1/4 cup of remaining shredded cheese, grated cheese and breadcrumbs.

  7. Bake for 15-20 minutes. Broil for a few minutes to get the breadcrumbs golden.

  8. Remove from oven and enjoy!
