Spinach Macaroni & Cheese

INGREDIENTS
12 oz elbow macaroni dry
2 tbsp. butter
3 tbsp. flour
2 cups milk
1 cup chicken broth low sodium
½ cup part skim mozzarella cheese shredded
½ cup cheddar cheese shredded
10 oz frozen spinach thawed & water squeezed out
½ cup seasoned bread crumbs
Pepper to taste
Salt to taste
This Spinach Macaroni & Cheese is so cheesy and delicious you'll never want to make boxed macaroni & cheese again. The entire family will love it!
DIRECTIONS
Preheat oven to 375℉.
Cook pasta according to directions. Set aside.
In a large pan melt butter. Add flour and cook over low heat stirring with a whisk. Add milk and chicken broth and continue whisking, until it comes to a boil and becomes smooth and thick.
Season with salt and pepper. Once it becomes thick, remove from heat, add 3/4 cup of shredded cheese (1/4 cup at a time) and mix well until cheese is melted. Adjust salt and pepper to taste.
Add cooked macaroni and spinach. Pour into baking dish.
Top with 1/4 cup of remaining shredded cheese, grated cheese and breadcrumbs.
Bake for 15-20 minutes. Broil for a few minutes to get the breadcrumbs golden.
Remove from oven and enjoy!
