Flatbread Breakfast Pizza

Servings: 1 | Prep: 5 min | Cook Time: 12 min

INGREDIENTS

  • 1 flat-out wrap, Aldi

  • 2 eggs

  • 1/4 cup reduced fat cheddar cheese, shredded

  • 3-4 tbsp. Salsa

  • Handful of spinach (or any veggie you like!)

  • Pepper

 

This Flatbread Breakfast Pizza is 31g protein and who doesn’t love pizza for breakfast?!

 

DIRECTIONS

  1. Preheat the oven to 375 degrees.

  2. Place the flat out wrap on a sheet pan and bake for 4 minutes.

  3. While the flatbread is heating up, whisk the eggs and pepper together in a small bowl. Heat a pan over medium heat.

  4. Spray with cooking spray and add spinach. Once wilted add the eggs. Stir as they cook. After about 1 minute add 2 tbsp of cheese. Continue to cook the eggs until fully cooked.

  5. Remove the wrap and top with the salsa (spread it out as evenly as you can) then top with the spinach eggs. Top with remaining 2 tbsp cheese.

  6. Place back in the oven for 6-8 minutes.
