Chicken Pizza Quesadillas

Servings: 24 triangles | Prep: 5 min | Cook Time: 15 min

INGREDIENTS

  • 2 cups shredded chicken

  • 2 cups part skim mozzarella cheese, shredded

  • 24 thin slices of pepperoni

  • 1/2 cup pizza sauce

  • 8 10” tortilla shells

  • 4 cups spinach

 

These Chicken Pizza Quesadillas are quick and easy to make. Perfect for lunch or dinner when limited on time.

 

DIRECTIONS

  1. Heat a pan or griddle over medium heat, spray the pan with cooking spray.

  2. Place one tortilla down. Top with 2 tbsp pizza sauce, then 1/4 cup of cheese, then 1/2 cup of shredded chicken, then 1 cup spinach, then 6 pepperoni and then another 1/4 cup of cheese. Top with another tortilla. Let it cook.

  3. When the tortilla on the bottom is crisp and golden, carefully flip over to cook the other side. Cook until both the bottom and top if the quesadilla are golden brown. OR use a quesadilla maker! Highly recommend one!

  4. Cut into triangles and serve with extra pizza sauce for dipping. Yields 6 servings. Serving size is 4 triangles (each wrap provides 6 triangles).
