Easy Chicken Fried Rice

Makes: 4 | Prep: 10 min | Cook Time: 15 minutes

INGREDIENTS

  • 1 pound chicken breast boneless, skinless, cut into bite sized pieces

  • 1 ½ cup rice cooked, jasmine

  • 1 12 oz bag frozen vegetables peas, carrots, corn and green beans

  • 2 eggs, large

  • 2 tbsp. olive oil

  • ¼ cup soy sauce, low sodium

  • 1 tbsp. sriracha

  • 1 tsp. pepper

  • 1 tsp. garlic powder

 

Trust me when I say this Easy Chicken Fried Rice is better than take out fried rice! Delicious and easy, this will be your new favorite weeknight meal.

 

DIRECTIONS

  1. In a medium bowl, combine the chicken, sriracha, garlic powder and pepper. Stir until the chicken is well coated.

  2. Heat a pan over medium heat, add 1 tbsp. olive oil. Add chicken and cook until cooked through, 165℉.

  3. While the chicken is cooking, microwave the frozen vegetables.

  4. Heat a separate large pan over medium heat. Add 1 tbsp. olive oil. Scramble the eggs with some pepper in a small bowl and then add the eggs to the heated pan. Heat until the eggs are cooked through.

  5. Add the cooked rice and vegetables to the pan with the scrambled eggs. Stir in the soy sauce. Heat on low-medium until the rice is heated. Add the cooked chicken and stir until everything is well combined.

  6. Serve with additional soy sauce if desired.

  7. Feel free to swap out the chicken for cooked shrimp or cooked steak bites.
