Fluffy Greek Yogurt Pancakes

Makes: 6 pancakes | Prep: 10 min | Cook Time: 15 minutes

INGREDIENTS

  • 1 ½ cup oat flour, 1 ½ cup old-fashioned oats blended

  • 1 cup nonfat plain Greek yogurt

  • 1 egg, large

  • ⅓ cup milk

  • 3 tbsp. butter, melted

  • 1 tbsp. sugar, white

  • 1 tsp. baking soda

  • 1 tsp. salt

  • 1 tsp. vanilla extract

  • 1 tsp. almond extract, optional

 

Skip the store-bought pancake mix in favor of this 15-minute recipe for light and fluffy homemade Greek yogurt pancakes. These Fluffy Greek Yogurt Pancakes are packed with protein and are seriously delicious.

 

DIRECTIONS

  1. In a small mixing bowl, combine oat flour, sugar, baking soda and salt. Mix until well combined.

  2. In a large mixing bowl, combine egg, Greek yogurt, milk, melted butter, vanilla extract and almond extract if using. Mix until well combined.

  3. Add the dry ingredients to the wet ingredients. Gently combine all the ingredients until well combined. Set aside and let sit for 10 minutes.

  4. In the meantime, heat a frying pan over medium heat. Spray with cooking spray. Pour ¼ cup portions of the pancake batter onto the prepared, heated surface. The batter should make 6 pancakes.

  5. Cook until bubbles start forming in the batter and the sides become set (about 2-4 minutes). Flip and cook for 2-4 minutes on the second side, or until golden brown.

  6. Serve with your favorite sliced fruit and maple syrup. Enjoy!
