Corn Salsa Shrimp Tacos

Servings: 4 | Prep: 10 min | Cook Time: 5 min

INGREDIENTS

  • 1 lb. Raw shrimp, tails removed

  • ALDI USA Cajun seasoning

  • 1 cup Corn kernels

  • 1 tbsp. olive oil

  • 1 Orange Bell pepper, diced

  • 1/2 cup Grape tomatoes, quartered

  • 1/4 Red onion, diced

  • 1/4 cup Cilantro, chopped

  • 1/4 cup Feta or cotija cheese, optional

  • Juice of 1 lime

  • Salt & pepper

  • Low carb tortilla shells

  • Avocado or guacamole

DIRECTIONS

  1. Heat olive oil in a pan. Add corn kernels with salt and pepper. Heat until slightly charred. Let cool.

  2. In a large bowl mix, corn, bell pepper, tomatoes, onion, cilantro, lime juice, feta or Cotija cheese, salt and pepper. Stir until well combined.

  3. Season shrimp on both sides. Cook for 1-2 minutes on each side, grill or stovetop.

  4. Assemble tacos. For 2 tacos, do 2 oz. shrimp per taco (4 oz. total), corn salsa and 2 tbsp. guacamole. Add any other desired toppings!
