Corn Salsa Shrimp Tacos

INGREDIENTS
1 lb. Raw shrimp, tails removed
1 cup Corn kernels
1 tbsp. olive oil
1 Orange Bell pepper, diced
1/2 cup Grape tomatoes, quartered
1/4 Red onion, diced
1/4 cup Cilantro, chopped
1/4 cup Feta or cotija cheese, optional
Juice of 1 lime
Salt & pepper
Low carb tortilla shells
Avocado or guacamole
DIRECTIONS
Heat olive oil in a pan. Add corn kernels with salt and pepper. Heat until slightly charred. Let cool.
In a large bowl mix, corn, bell pepper, tomatoes, onion, cilantro, lime juice, feta or Cotija cheese, salt and pepper. Stir until well combined.
Season shrimp on both sides. Cook for 1-2 minutes on each side, grill or stovetop.
Assemble tacos. For 2 tacos, do 2 oz. shrimp per taco (4 oz. total), corn salsa and 2 tbsp. guacamole. Add any other desired toppings!
