Chicken Taquitos

Servings: 8 taquitos | Prep: 10 min | Cook Time: 4 hours 15 min - 6 hours 15 min

INGREDIENTS

  • 1 lb. boneless skinless chicken breast

  • 1 packet of taco seasoning

  • 14 mini low carb tortilla shells

  • 1/3 cup plain nonfat Greek yogurt

  • 2/3 cup Mexican cheese, shredded

 

These Chicken Taquitos are simple yet delicious.

 

DIRECTIONS

  1. Place chicken and taco seasoning packet in a crockpot. Cook on high for 4 hours or low for 6 hours. Shred the chicken.

  2. Mix in Greek yogurt and shredded cheese. Lay the tortilla shells out flat and add about ¼ cup of the chicken mixture to each shell. Roll the top over the chicken and close as best as you can.

  3. Add to an air fryer. Give a quick spray with olive oil or cooking spray and cook at 400 degrees for 6-8 minutes. Flip and spray again. Cook for an additional 6-8 minutes or until crispy on the outside.

  4. Serve with your favorite toppings; guacamole, diced avocado, sour cream, plain Greek yogurt, salsa, chopped cilantro etc. Serve with a side of Mexican street corn salad kit, diced avocados and salsa!
