Chicken & Spinach Stuffed Shells

Servings: 18 shells | Prep: 20 min | Cook Time: 40 min

INGREDIENTS

  • 18 large pasta shells, cooked according to directions

  • 5 oz. cubed chicken, cooked

  • 1 container (15 oz.) part skim ricotta cheese

  • 1/4 cup Parmesan cheese

  • 2 cups frozen cut leaf spinach, thawed, squeezed to drain

  • 1 egg

  • 1 cup pasta sauce

  • 2 cups part skim mozzarella cheese, shredded

  • Salt

  • Pepper

These Chicken & Spinach Stuffed Shells make for the perfect comfort meal.

 

DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. In a large bowl combine ricotta cheese, egg, parmesan cheese, chicken, spinach and salt and pepper together.

  3. Spread sauce on bottom of 13x9 inch glass pan. Fill shells evenly with mixture. Place shells on sauce. Cover with foil and back for 30 minutes.

  4. Remove foil and add cheese to top of shells. Bake uncovered for 5-10 minutes or until cheese has melted.

  5. Serve with additional sauce if desired.
