Carrot Fries

Servings: 6 | Prep: 15 min | Cook Time: 50 min

INGREDIENTS

  • 2 pounds carrots, peeled and sliced into 1/4 in thick ‘fries’

  • 2 tbsp. oil of choice

  • 1 tsp. garlic powder

  • 1 tsp. paprika

  • 1/2 tsp. cayenne pepper

  • Salt and pepper to taste

  • 1/4 cup parmesan cheese, grated

  • Parsley for garnish

 

These Carrot Fries are a twist on classic French fries. They make for the perfect vegetable side.

 

DIRECTIONS

  1. Preheat oven to 425 degrees.

  2. Place carrots in large bowl (make sure they are completely dry). Add oil, garlic powder, paprika, cayenne pepper, salt and pepper for taste. Mix until carrots are well coated.

  3. Place on 1-2 baking sheets lined with parchment paper. Making sure the carrots don't overlap.

  4. Bake for 20-25 minutes. Remove from oven and toss with Parmesan cheese and place back in the oven for an additional 10-25 minutes or until desired crunch.

  5. OR cook in the air fryer. At 400 degrees for 18-20 minutes.

  6. Garnish with parsley and dip in your favorite dipping sauce.
