Breakfast Quesadilla

Makes: 1 | Prep: 10 min | Cook Time: 5 minutes

INGREDIENTS

  • 2 tortilla shells

  • ½ bell pepper chopped, or any other veggies of choice (mushrooms, broccoli, spinach, tomatoes or a combo)

  • 2 eggs, large

  • ¼ cup cheese, shredded

  • Salt

  • Pepper

    Optional

    • Salsa

    • Guacamole

    • Sour cream

    • Greek yogurt plain

 

This Breakfast Quesadilla is packed with eggs and your choice of veggies and cheese. Perfect for breakfast, brunch and even dinner!

 

DIRECTIONS

  1. Heat a small-medium pan with cooking spray, add the bell pepper (or veggie of choice). Sauté for a few minutes or until veggies are tender crisp.

  2. In a small bowl whisk egg, salt and pepper.

  3. Add the eggs to the pan with the veggies and continue to cook until eggs are cooked through.

  4. Spray quesadilla maker with cooking spray. Place a tortilla shell down, top with 2 tbsp. of cheese, then the egg and veggie mixture, followed by the remaining 2 tbsp. of cheese. Cover with the other tortilla shell.

  5. Close the quesadilla maker and cook until golden brown.

  6. Cut into triangles and serve with your favorite toppings!

  7. Enjoy!
