BBQ Chicken Bowls

Makes: 4 | Prep: 10 min | Cook Time: 10 minutes

INGREDIENTS

  • 1-pound boneless skinless chicken breast, cut into bite size pieces

  • ½ cup BBQ sauce

  • 1 cup jasmine rice, cooked

  • ⅔ corn kernels, fresh or frozen

  • ⅔ black beans, rinsed and drained

  • 2 cups romaine lettuce, chopped

  • ½ cup cheese, shredded

  • ⅔ cup tomatoes, diced

  • 1 avocado, diced

  • 1 lime wedges

  • ¼ cup cilantro, chopped

  • ½ cup salsa

 

These BBQ Chicken Bowls are perfect for weeknight dinners. They come together in just 20 minutes and are full of the classic barbecue flavor you love.

 

DIRECTIONS

  1. In a Ziplock bag add the chicken and BBQ sauce. Make sure all the chicken is coated with the sauce. Optional, place in the refrigerator for at 15 minutes before cooking.

  2. You could also grill the chicken if preferred and then cut into bite size pieces.

  3. Heat a non-stick pan with cooking spray. Add the BBQ chicken and cooked until the chicken is cooked through, 8-10 minutes.

  4. While the chicken is cooking prepare the other ingredients.

  5. Arrange the bowl with ¼ of all the ingredients. Top with an additional desired toppings. Enjoy!
