Balsamic Roasted Asparagus with Feta

Servings: 4 | Prep: 10 min | Cook Time: 12 min

INGREDIENTS

  • 1 bundle of asparagus

  • 2 tsp. Olive oil

  • 1 tbsp. aged balsamic glaze (additional to drizzle on prior to serving)

  • 1/4 cup Feta cheese (or goat cheese)

  • 2 tbsp. Dried cranberries

  • 2 tbsp. Pumpkin seeds

  • Salt

  • Pepper

This Balsamic Roasted Asparagus with Feta make for the perfect holiday side dish or even a weeknight meal.

 

DIRECTIONS

  1. Preheat the oven to 450 degrees. Prepare a baking sheet.

  2. In a small bowl, whisk together olive oil and balsamic glaze. Arrange asparagus on prepared pan in a single layer. Season with salt and pepper, to taste.

  3. Drizzle with vinegar and oil mixture and toss lightly to coat. Roast until crisp-tender, 10-12 minutes.

  4. Meanwhile, toss feta, cranberries and pumpkin seeds together in a small bowl.

  5. Remove asparagus from oven. Arrange on a platter and sprinkle with feta and cranberry mixture. Drizzle with additional balsamic glaze if desired. Serve immediately.
