Balsamic Roasted Asparagus with Feta

INGREDIENTS
1 bundle of asparagus
2 tsp. Olive oil
1 tbsp. aged balsamic glaze (additional to drizzle on prior to serving)
1/4 cup Feta cheese (or goat cheese)
2 tbsp. Dried cranberries
2 tbsp. Pumpkin seeds
Salt
Pepper
This Balsamic Roasted Asparagus with Feta make for the perfect holiday side dish or even a weeknight meal.
DIRECTIONS
Preheat the oven to 450 degrees. Prepare a baking sheet.
In a small bowl, whisk together olive oil and balsamic glaze. Arrange asparagus on prepared pan in a single layer. Season with salt and pepper, to taste.
Drizzle with vinegar and oil mixture and toss lightly to coat. Roast until crisp-tender, 10-12 minutes.
Meanwhile, toss feta, cranberries and pumpkin seeds together in a small bowl.
Remove asparagus from oven. Arrange on a platter and sprinkle with feta and cranberry mixture. Drizzle with additional balsamic glaze if desired. Serve immediately.
