Apple Cinnamon Muffins

INGREDIENTS

  • 1 cup old fashioned oats

  • 1 cup quick oats

  • 1 cup oat flour

  • 2 tsp. Cinnamon

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/2 tsp. Salt

  • 1 cup milk, I used fairlife

  • 1/3 cup honey

  • 2 tbsp. Unsweetened applesauce

  • 2 tbsp. Butter, melted

  • 2 eggs

  • 1 tsp. Vanilla

  • 2 medium apples, chopped

These Apple Cinnamon Muffins are made with simple pantry ingredients and are perfect for breakfast, snack time, or a quick grab-and-go option.

 

DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. In a large mixing bowl, whisk together the old-fashioned oats, rolled oats, oat flour, cinnamon, baking powder, baking soda, and salt.

  3. In another bowl, combine the milk, eggs, honey, applesauce, melted butter and vanilla.

  4. Pour the wet ingredients into the dry and stir until combined. Fold the diced apples in.

  5. Divide the mixture into 12 prepared muffin tin holders.

  6. Bake for 18-20 minutes or until a toothpick comes out smooth. Enjoy!
