Easy Shrimp Pasta

Servings: 6 | Prep: 5 min | Cook Time: 15 min

INGREDIENTS

  • 1 lb. shrimp, tails removed

  • 12 oz. uncooked protein pasta

  • 3 tbsp. olive oil

  • 1 pint cherry tomatoes


  • 4 garlic cloves, minced

  • 1/4 tsp. crushed red pepper flakes (optional)

  • 1 tbsp. lemon zest

  • 1/2 cup white wine

  • 1/2 cup parsley, chopped

  • 1 tbsp. lemon juice

  • Pepper

This Easy Shrimp Pasta is what it says, easy! But also, delicious and perfect for a quick weeknight dinner meal.

 

DIRECTIONS

  1. Cook pasta according to directions. Drain and set aside. While the pasta is cooking make the sauce. 


  2. Heat a large sauté pan over medium-high heat, add the olive oil. Once the oil is hot, add the tomatoes and cook, stirring, for 2 minutes.
Add the garlic and chili flakes and cook, stirring, until the garlic is golden brown and fragrant, about 2 minutes.

  3. Add the shrimp and cook, flipping once, until pink and cooked through, about 3 minutes.

  4. Add the white wine and cook until it has reduced by half. Add the lemon zest, lemon juice, parsley, and pepper. 


  5. Top with Parmesan cheese (optional). Enjoy!
