Tortilla Egg Bake

Makes: 1 | Prep: 5 min | Cook Time: 25 minutes

INGREDIENTS

  • 1 large tortilla shell

  • 3 eggs, large

  • ¼ cup low fat cottage cheese

  • ¼ cup part skim ricotta cheese

  • ¼ cup part skim mozzarella cheese

  • 1-2 cups spinach raw, chopped

  • ¼ cup tomatoes diced

  • ¼ tsp. salt

  • ¼ tsp. pepper

  • ⅛ tsp. crushed red pepper

 

This Tortilla Egg Bake is packed with 45g protein and will keep you satisfied for hours. This recipe can be made to your liking with different veggies and or cheeses.

 

DIRECTIONS

  1. Preheat oven to 350℉.

  2. Prepare a round baking dish or pie dish with cooking spray.

  3. Place a large tortilla in the bottom of the prepared dish, press down lightly. 

  4. Whisk the eggs, cottage cheese and ricotta cheese together in a bowl until smooth. Season with salt, pepper and crushed red pepper.

  5. Pour the mixture over the tortilla and add your veggies. Make sure to spread then out evenly over the mixture. I lightly mixed them in with a fork.

  6. Sprinkle with cheese. Bake for 23-25 minutes or until eggs are set.

  7. Remove from oven. Let sit for 3-5 minutes. Slice and enjoy!
