Taco Cups

Makes: 40 taco cups | Prep: 15 min | Cook Time: 15 min

INGREDIENTS

  • 40 wonton wrappers

  • 1 lb. ground turkey 93/7

  • 1 14.5 oz can fire roasted diced tomatoes not drained

  • 1 cup corn fresh or frozen

  • 1 taco seasoning packet

  • 1 cup Mexican blend cheese shredded

 

Tacos, one of the most popular dinner meals in our house. Is this the case in anyone else's house? Since we all love tacos why not make bite size taco cups? Genius idea!

 

DIRECTIONS

  1. Preheat oven to 375° Fahrenheit.

  2. In a medium saucepan heat ground turkey until browned. Remove from heat. Add taco seasoning packet, fire roasted diced tomatoes and corn. Stir until well combined. 

  3. Spray a small muffin tin with cooking spray. You will either need two small muffin tins or one and cook in two different batches. Line each cup with 1 wonton wrap.

  4. Spoon about 1 ½ tablespoon of ground turkey mixture into each wonton wrap. Repeat until 40 wraps are filled.

  5. Top each taco cup with shredded cheese.

  6. Bake for 12-15 minutes until heated through and the edges are golden. Top with your favorite toppings.

    Optional Toppings

    • Jalapeños sliced

    • Avocado

    • Guacamole

    • Black olives sliced

    • Salsa

    • Sour cream

    • Plain Greek yogurt
