Bang Bang Salmon Bowls

INGREDIENTS

  • 2 6 oz salmon fillets skin removed & cut into 2 inch cubes

  • ¼ cup bang bang sauce

  • Pepper to taste

  • ⅔ cup edamame steamed

  • 1 cucumber large, diced

  • 1 cup cooked jasmine rice

 

These Bang Bang Salmon Bowls are spicy, sweet and so easy to make. With only 15 minutes of active prep and cook time, this is the perfect easy dinner recipe for the whole family.

 

DIRECTIONS

  1. In a medium bowl add the salmon pieces, bang bang sauce and pepper.

  2. Gently stir until the salmon is evenly coated. Place the salmon cubes into the air fryer at 400 degrees and cook for 7-8 minutes.

  3. While the salmon is cooking you can assemble the rest of the bowl.

  4. For this part you can use whatever you like! First start with a grain, I kept it simple and did a 90 second rice/quinoa blend but I think farro would also be a really good base.

  5. Then top it with edamame and cucumber. Add the salmon bites and drizzle additional bang bang sauce if desired.

  6. Enjoy!
