Protein Pumpkin Muffins

INGREDIENTS
1.5 cups protein pancake mix
2 scoops unflavored or vanilla protein powder
1.5 tsp. baking soda
2 tsp. Cinnamon
3 tbsp. Super seed mix (blend of flax seeds, chia seeds and hemp hearts)
1 tsp. Pumpkin spice seasoning
15 oz. Can of pumpkin puree (not pumpkin pie mix)
2 eggs
1/2 cup honey
1/4 cup plain Greek yogurt
2 tbsp. Coconut oil, melted
2 tsp. Vanilla extract
Optional add ins or toppers
Chocolate chips
Nuts
Seeds
These Protein Pumpkin Muffins are the perfect fall recipe.
DIRECTIONS
Preheat your oven to 375° and line a 12-muffin tin.
In a medium bowl, mix together the pancake mix, protein powder, cinnamon, pumpkin spice, and baking soda. Set aside.
In a separate bowl, whisk together pumpkin, honey, eggs, oil, Greek yogurt, and vanilla.
Add the dry ingredients and stir until combined. Fold in optional add ins.
Divide the batter evenly between 12 muffins. Sprinkle with optional add ons. Bake for 20-22 minutes or until a toothpick inserted in the center comes out clean. Enjoy!
