Pork Burrito Bowl

Servings: 6 | Prep: 20 min | Cook Time: 6 hours

INGREDIENTS

  • 1 lb. shredded pork - pork loin (pre-seasoned)

  • 3 cups jasmine rice, cooked

  • 3 cups romaine lettuce

  • 1 cup corn kernels

  • 1 cup black beans, drained and rinsed

  • Sauteed peppers and onions (2 bell peppers & onion)

  • 3 oz. Mexican cheese, shredded

  • 1 cup Pico

  • 2 avocados, sliced

  • 2 limes, sliced

  • 1/3 cup cilantro, chopped

 

This Pork Burrito Bowl tastes even better than it looks! Makes for a perfect weeknight meal or weekly meal prep.

 

DIRECTIONS

  1. Cook pork loin in crockpot with a little water in on low for 6 hours (or high for 4 hours). Shred.

  2. Sauté the peppers and onions in a sauté pan sprayed with cooking spray until tender crisp.

  3. Assemble the bowl, rice, shredded pork, romaine lettuce, peppers and onions, con, black beans, Pico, avocados, cheese, lime, and cilantro.
