Mexican Bowls

Makes: 4 | Prep: 10 min | Cook Time: 15 minutes

INGREDIENTS

  • 1 pound ground turkey or ground beef, chicken

  • taco seasoning packet

  • 2 cups cooked white rice

  • ½ cup corn kernels, fresh or frozen

  • ½ cup black beans, rinsed and drained

  • ¾ cup tomatoes

  • 1 cup cheddar cheese, shredded

  • ¼ cup cilantro, chopped

  • Lime wedges

    Optional

    • Guacamole

    • Avocado, sliced

    • Black olives, sliced

    • Onions, chopped

    • Jalapeños, sliced

 

These Mexican Bowls are the easiest yet so flavorful meal prep idea!

 

DIRECTIONS

  1. Make taco meat according to taco seasoning packet. Set Aside.

  2. Between four meal prep containers divide the rice (½ cup each). Top the rice with taco meat, corn, black beans, tomatoes, cheese, cilantro, lime wedges (add any other desired toppings).

  3. When ready to eat, reheat in the microwave for 1-2 minutes. Enjoy!
