Ground Turkey & Broccoli
Makes: 4 | Prep: 10 min | Cook Time: 20 minutes
INGREDIENTS
1 pound ground turkey, 93/7
1 tbsp. olive oil
3 cups broccoli, cut into small bite size pieces
1 onion yellow, diced
1 bell pepper red, cut into slices
For The Sauce
2 tbsp. cornstarch + 2 tbsp. cold water
1 cup chicken broth (beef or vegetable would also work)
¼ cup soy sauce low sodium
⅓ cup lite brown sugar
2 tbsp. honey
2 garlic cloves, minced
½ tsp. ground ginger
1 tsp. olive oil
½ tsp. pepper
Optional
cooked rice or couscous
This Ground Turkey & Broccoli is the perfect weeknight meal the entire family will love. Delicious and ready in 30 minutes or less!
DIRECTIONS
Combine the cornstarch and water in a covered container and shake to combine. Set aside.
Combine the remaining sauce ingredients in a medium bowl and set aside.
Heat the olive oil over medium heat. Add the broccoli and toss to coat. Cook for 4-5 minutes or until slightly softened. Remove from the pan and set aside in a clean bowl.
Season the turkey with salt and pepper. Cook the ground turkey and diced onion over medium-high heat until browned and cooked through.
Add the sliced bell peppers to the cooked ground turkey and cook for 1 minute. Add the premade sauce mixture and bring to a gentle boil Let it simmer/reduce for 2-3 minutes. Shake the cornstarch mixture, then slowly stir it into the sauce. Let it continue to bubble gently until desired thickness is obtained.
Reduce heat to low. Add the broccoli back and stir to combine and heat through. Serve over rice or couscous. Enjoy!
