Cheesy Spinach Salmon
Makes: 2 | Prep: 10 min | Cook Time: 15 minutes
INGREDIENTS
2, 6 oz salmon fillets
2 oz reduced fat cream cheese
¼ cup part skim mozzarella cheese, shredded
1 tbsp. parmesan cheese, shredded
1 cup fresh spinach, chopped
½ tsp. pepper
¼ tsp. garlic powder
The cheesy spinach salmon is a simple meal that looks complex. Tender and flaky salmon combined with creamy and smooth spinach topping; this salmon has it all! It is a great meal that’s easy enough to make on a weeknight but also fancy enough for an elegant dinner.
DIRECTIONS
Heat oven to 425° Fahrenheit.
In a small bowl combine reduced fat cream cheese, mozzarella cheese, parmesan cheese, chopped spinach, pepper and garlic powder. Mix until well combined. Set aside.
Place salmon fillets on a prepared baking sheet.
Pat salmon dry. Place half of the cheese and spinach mixture on top of one salmon fillet and the remainder of the mixture on the other salmon fillet.
Bake for 12-13 minutes. Optional; broil for 2-3 minutes.
Serve with rice and asparagus. Enjoy.
