Ground Turkey Baked Tacos

Servings: 16 tacos | Prep: 15 min | Cook Time: 25 min

INGREDIENTS

  • 1 lb. ground turkey

  • 4 oz. can of green chilies, not drained

  • 1 taco seasoning packet

  • 16 small flour tortilla shells

  • 1 cup black beans, drained and rinsed

  • 2 cup cheddar cheese, shredded

Optional

  • Jalapeños sliced or diced

  • Cilantro, chopped

  • Avocado, sliced

  • Guacamole

  • Olives, sliced

  • Sour cream or plain Greek yogurt

  • Salsa

  • Tomatoes, diced

  • Lettuce, shredded

  • Cilantro avocado yogurt dressing

 

These Ground Turkey Baked Tacos are a spinoff of my Baked Chicken Tacos and they do no disappointment.

 

DIRECTIONS

  1. Add the ground turkey to a skillet sprayed with cooking spray. Break the ground turkey up into small pieces and cook until browned and cooked through.

  2. Add the taco seasoning, can of green chilies and black beans to the pan. Mix until everything is well combined. Heat for 3-5 minutes.

  3. Preheat oven to 425℉ and line a baking sheet (you may need two baking sheets) with foil or silicone mat.

  4. Spray each tortilla with cooking spray and lay them flat on the baking sheet. Bake for 3 minutes. They should be soft and pliable.

  5. Remove the tortillas from the oven. On one half of the tortilla add ½ oz. of shredded cheese, ¼ cup ground turkey mixture, followed by ½ oz. of shredded cheese. Fold the other half of the tortilla over the side with the food goodies.

  6. Bake for 20 minutes, flipping halfway through.

  7. Remove from the oven and add additional toppings.
