Grilled Greek Shrimp Bowls

Servings: 4 | Prep: 15 min | Cook Time: 15 min

INGREDIENTS

  • 1.5 pounds shrimp with tails on

  • 3 bell peppers different colors, cut into equal sized chunks

  • 2 zucchini large

  • ⅓ cup feta cheese

  • ½ cup Greek dressing

  • 2 tbsp. olive oil

  • ½ tsp. garlic powder

  • ½ tsp. oregano

  • ½ tsp. paprika

  • ¼ tsp. pepper

  • ¼ tsp. salt

  • ½ cup tzatziki

    Optional

    • rice, quinoa or farro cooked

    • kalamata olives

 

These Grilled Greek Shrimp Bowls will not disappointment. Not only do they come together in less than 30 minutes they are delicious!

 

DIRECTIONS

  1. Heat grill.

  2. In a large bowl add the bell peppers, zucchini, olive oil and all the spices. Toss until the vegetables are well coated.

  3. Grill the vegetables in a vegetable basket on the grill until they are cooked to your liking.

  4. Arrange the shrimp on skewers. I prefer to use metal skewers, so I don't have to soak the wooden skewers prior to cooking.

  5. Grill the shrimp while basting with the Greek dressing to your liking. They should not take long to cook.

  6. Arrange your bowl. Rice (optional) shrimp, vegetables, feta cheese and tzatziki (and any additional desired ingredients).

  7. Enjoy!
