Greek Chicken Bowls

INGREDIENTS

  • 1 pound skinless boneless chicken cut into even sized cubes

  • ½ cup Greek dressing

  • ⅓ feta cheese crumbled

  • 1 English cucumber diced

  • 1 cup grape tomatoes halved or quartered

  • ½ Kalamata olives pits removed and halved

  • ½ red onion sliced

  • ½ cup Tzatziki

  • Salt to taste

  • Pepper to taste

    Optional

    • Peperoncino

    • Jasmine rice cooked

    • Romaine lettuce shredded

    • Greek dressing

 

These Greek Chicken Bowls are exactly what you need for an easy lunch or dinner! Made with marinated Greek chicken, feta cheese, fresh cucumbers, tomatoes, kalamata olives, onions and tzatziki.

 

DIRECTIONS

  1. In a large bowl add chicken and Greek dressing. Let the chicken marinate for at least 20 minutes. I will let marinate overnight in the fridge.

  2. Cook the chicken how ever you prefer. I prefer to cook mine in a pan with some cooking spray for about 7-8 minutes or until cooked through. Other ways; oven or air fryer.

  3. Arrange your bowl. Base (rice or romaine lettuce), chicken feta cheese, cucumber, tomatoes, kalamata olives, onions, tzatziki and any additional desired toppings or seasonings like salt and/or pepper.

  4. Enjoy!
