Pepper Steak

Servings: 4 | Prep: 10 min | Cook Time: 30 min

INGREDIENTS

  • 1 pound beef top sirloin, flank steak (thinly sliced across the grain)

  • 2 tbsp. olive oil

  • 3 bell peppers colors of choice, cut into thin strips

  • 1 white onion medium, cut into wedges

  • 8 oz mushrooms sliced (optional)

  • 2 garlic cloves minced

  • 10 oz Campbells golden mushroom soup

  • 5 oz water

  • 2 tbsp. light soy sauce

  • ½ tsp. ground ginger

    Optional

    • cooked rice

 

This Pepper Steak is made with tender meat and is loaded with veggies. Serve over rice for an easy weeknight dinner that the entire family will love.

 

DIRECTIONS

  1. Heat 1 tbsp. olive oil. Add sliced beef and cook for 8-10 minutes. Remove from pan and set aside.

  2. In same skillet heat 1 tbsp olive oil. Add garlic and sauté for 1-2 minutes or until fragrant. Add peppers, onions and mushrooms.

  3. Heat until vegetables are tender crisp about 5-7 minutes.

  4. Stir in soup, water (pour 5 oz. of water in the empty soup can and scrap sides), soy sauce, ginger and pepper.

  5. Heat to boiling. Return cooked beef to pan.

  6. Heat for an additional 3-5 minutes. Serve over rice or eat as is. Enjoy!
