Servings: 6 | Prep: 10 min | Cook Time: 15 min
INGREDIENTS
1 lb. boneless skinless chicken cut into bite-size pieces
2 cups cheddar goldfish crackers
¼ cup all purpose flour
2 eggs
What do kids love to eat? Goldfish crackers and chicken nuggets! So why not combine the two?! Like most kids, my son is obsessed with goldfish crackers. He would eat the entire bag if you let him. So I knew he (and every other kid) would love this cheesy crunchy combo.
These cheesy Goldfish Crusted Chicken Nuggets are delicious and crunchy. With only four ingredients and taking less than 30 minutes to make you and the kiddos will love them!
DIRECTIONS
Preheat air fryer to 400° Fahrenheit.
Place the goldfish in a freezer bag and then seal. Crush the goldfish in the freezer bag. Set aside.
In a large bowl, toss the chicken in the flour until the chicken is well coated.
Crack and beat the eggs in a different bowl. Shake excess flour off each piece of chicken and place into the bowl with the eggs. Coat each piece of chicken with the egg bath.
Take each piece of chicken from the egg bath and place in the bag of crushed goldfish. Seal and toss chicken in the crushed goldfish until each piece of chicken is completely coated.
Spray air fryer with cooking spray.
Place the chicken nuggets in the air fryer making sure they do not overlap each other, to allow them to cook evenly. Bake for 10-12 minutes or until chicken is cooked through and goldfish crumbs start to toast.
Serve with your favorite dipping sauce; ketchup, blue cheese, ranch, hot sauce etc.
